MENU OF THE WEEK TBA BAGAARA BAINGAN Baby egg plant cooked in a ground masala of roasted peanuts, sesame seeds, coriander seeds, garlic, fresh coconut and dry red chillis. Chattinad Chicken-A south Indian chicken curry made with a variety of spices and coconut milk. Tawa Prawns-Jumbo shrimp sautéed in a ground masala of onions, red chillis and poppy seeds. Paneer Masala-Cubed paneer cooked in a creamy sour cream sauce. Bhoondi Raita-Store bought bhoodi (mini spicy fried chick pea balls) mixed with yogurt, garnished with roasted cumin powder. VEGETARIAN SAMOSAS Spicy potatoes filled in a flour tortilla and deep fried. PANEER TIKKA MASALA (Indian cheese curry)-Paneer chunks cooked in a creamy ground tomatoes, onion, sour cream based sauce. TAWA PRAWNS Jumbo shrimp sautéed in a ground masala of onions, red chillis and poppy seeds. TANDOORI CHICKEN Chicken leg quarters marinated in yogurt, tandoori powder, garlic and ginger paste, chilli powder and lime juice. Then cooked in the oven. VEGETABLE KURMA Cauliflower, green beans, potatoes and carrot cooked with fresh coconut and yogurt masala. Pompano Fish Fry Ingredients: Pompano Fish………….2 lbs Cut into steaks Turmeric……….1/2 tsp Chilli powder..1 tsp Coriander powder……….1 tsp Garlic and ginger paste………1 ½ tsp Tamarind pulp…..2 Tblsp Lime juice…..1/2 lime Olive oil…..2 Tblp Chickpea flour(available in Indian stores)….1 heaped Tblsp Salt………..to taste Method: Mix together tamarind pulp,salt,chilli powder,coriander,lime juice,olive oil,garlic ginger paste, Add fish and mix well to coat the fish. Marinate fish for four hours or overnite. In a shallow pan add ¼ cup olive oil, Add chickpea flour to the fish, mix well. Place fish steaks in the hot oil and fry for 5-8 mins on each side or until well done. Serve hot…………ENJOY!!!

TANDOORI SHRIMP -------------------- Jumbo shrimp…………..1lb Yogurt………………..1/4cup Tandoori powder………..1tsp Chili powder…….1tsp Turmeric…..1/2tsp Coriander powder…………….1tsp Garlic and ginger paste………………..1tsp Olive oil…………2tblsps Salt……….to taste GARNISH: Okra……….1 lb cut into thin strips Garam masala……..1 tsp Chick pea flour……..1 tblsp Chilli powder……1/2 tsp Yogurt………………2 tsps Salt…to taste Chaat masala……………..1/2 tsp Lime juice…………juice of half lime Red onion…………………..1/2 onion thinly sliced Cilantro………1/4 cup METHOD: Mix together yogurt,salt,tandoori powder, chili powder, coriander powder,G&G paste, olive oil and turmeric powder. Then add shrimp to the yogurt mixture and marinate for 4 hrs or overnight. Grill the shrimp on a grill pan or on an outdoor grill until done. Mix sliced okra with salt, garam masala, chick pea flour, chilli powder, yogurt and deep fry until crisp. In serving bowl mix fried okra with sliced red onion and chopped cilantro and sprinkle with chaat masala and lime juice. Serve with grilled tandoori prawns…………….ENJOY!!!
